My Favorite Summer Meal Prep (That Barely Feels Like Meal Prep)

One of my favorite things about summer is how simple healthy eating can be.

This time of year, I'm trying to spend as much time outside as possible. Whether it's taking the kids to the park, eating dinner on the patio, or squeezing in a walk after work, I don't want to spend hours in the kitchen. The good news is that summer makes it easy.

When produce is fresh and in season, you don't have to do much to make it taste good. A few fresh ingredients, a simple protein, and you've got meals that feel nourishing without requiring a complicated recipe. I've also found that eating with the seasons naturally adds more variety to my week. Instead of buying the same fruits and vegetables year-round, I lean into what's growing right now. Everything tastes better, it's often more affordable, and it makes healthy eating feel exciting instead of repetitive.

My goal isn't to prep elaborate meals. It's to have ingredients ready that can be mixed and matched throughout the week so lunch, dinner, or a quick snack comes together in just a few minutes.

My Favorite Summer Farmers Market Finds

  • Grill or bake a batch of chicken.

With just those basics, I can make different meals all week without feeling like I'm eating the exact same thing every day.

A Few Tips That Make Healthy Eating Easier:
  • Prep once, eat all week. Even 20–30 minutes washing and chopping produce saves so much time later.
  • Think ingredients instead of recipes. A few versatile staples create endless combinations.
  • Don't overbuy. Fresh produce tastes best when you actually eat it. Buy what you'll realistically use in the next few days.
  • Keep healthy foods visible. Put washed fruit at eye level in the fridge so everyone reaches for it first.
  • Use fresh herbs. Basil, cilantro, dill, or parsley can completely change the flavor of a meal without much effort.
  • Let the produce shine. Summer fruits and vegetables don't need complicated sauces or seasonings—olive oil, lemon, salt, and pepper often do the trick.

Healthy eating doesn't have to be complicated, especially in the summer! Some of my favorite meals this time of year are also the simplest. Fresh, seasonal ingredients do most of the work, and having a few staples prepped means I can spend less time cooking and more time enjoying this busy season with my family.
