Breakfast Burritos to Prep for a Busy Morning
One thing I love to prep for myself and my family is breakfast burritos. As we’re prepping to head into back-to-school routines (can you believe how fast this summer flew by?), having a few of these in the freezer makes busy mornings so much easier. They're also super customizable, so you can make each one a little different depending on what your family likes.
You'll need:Large flour tortillasScrambled eggsCooked breakfast sausage or chorizoDiced onions and/or bell peppers (optional)Cooked hash brownsShredded cheeseSalsa or hot sauce (optional)
How to make them:Cook the sausage (or chorizo) and sauté the onions and peppers if using.Scramble the eggs and cook the hash browns until crispy.Lay out a tortilla and layer on eggs, sausage, hash browns, cheese, and any veggies you'd like.Fold the sides in, roll tightly, and enjoy right away - or wrap each burrito individually in foil or parchment paper.
To freeze:
Let the fillings cool completely before assembling. Wrap each burrito tightly and store in a freezer-safe bag or container for up to 3 months.
To reheat:
Microwave from thawed for 1–2 minutes (or from frozen for 2–4 minutes, flipping halfway through). You can also warm them in the oven or air fryer for a crispier tortilla.
